This is the recipe I’ve needed all my adult life. I have a thing for apple fritters, but they’re a bit labor intensive for a Thursday evening. I started these after picking my daughter up from the bus stop and they were ready for “breakfast for dinner” with enough to share with the neighbors. I really appreciate the nutmeg in the dough *and* the filling! I tweaked it a little for my preferences (standard apple fritter glaze, oil in lieu of butter for the filling, and cut into 16 rolls to fill my all-edges pan). They temped at 194° when I took them out of the oven and they are so, so good!
I did not see the part about not mixing the apples into the filling until ready to use, so it was pretty soupy and a little messy, but the dough was so elastic it stretched to catch a lot of it. I poured the remaining cinnamon apple “juice” over the rolls before covering for the second rise.

I used Granny Smith apples. I put the chopped apple pieces on paper towels to draw out some of the moisture. Baked the rolls in a glass dish for 25 minutes. I only used about half of the caramel glaze. The rolls are so good you want to keep them as the star attraction while simply accentuating them with the glaze. (The glaze is really good and I kept the leftovers for other uses.)

This recipe was easy to follow. This is the third one I have tried, 3rd weekend in a row, that uses the same base sweet bread base, which I love. Recipes that incorporate apples are a favorite of mine to try. I can see why this one can be a big hit. I did have a few difficulties. It was hard to tell when it was really done. I used and aluminum pan and have temp gauges, so my oven was at 350. It took close to 35 min for me to think it was done…and still not sure. Will have to wait to eat a center roll. Addtionally, despite how fast I tried to work, the caramel glaze set before I could get all of it on. Therefore, about 25% ended up being crumbled on. The rolls and the glaze are delicious and work well together in general. However, for me, these are overly sweet with the glaze amount and it overwhelms the taste of the apple filling. If I were to make again, I would try cutting the glaze amount in half to see if that helps.

these were incredible! this dough is so nice to work with. I don’t do well with anything that needs to be rolled out. these rolled out very nicely. next will be the same dough recipe with pecans instead of apples

I made these today and cannot even believe how amazing they came out. I have a pretty reliable cinnamon roll recipe and this one puts that one to shame! Such a beautiful dough; it came out so tender and soft and PERFECT. I was worried for a minute there because my apple filling was super wet – and I didn’t mix it right until I spread it on the dough. It was a drippy, hot mess but it didn’t even matter because they couldn’t have come out of the oven any better! I will keep this in my arsenal for sure. THANK YOU!
