I made this bread for the first time last night and it came out great! Next time I want to try adding some inclusions (not sure which ones yet). But the outside was perfectly crispy and the inside was pillowy soft.

Hi Greg and Mary,
This could be due to altitude and humidity. I currently live in Alaska and usually use about 1/2 a cup more of water than asked here. What I would do is as your mixing it and you find your dough to be dry and hard, add a little water at a time until your dough gets the right consistency.

Hi Ariel! This will take some tweaking but could be a fun experiment! You will want to reduce the flour and add some cocoa powder. Cocoa powder is a lot drier so you may need to add some sugar. It will definitely take some tweaking, but if you do try it I would love to know how it goes. πŸ™‚

I’ve never made this bread but when I make regular one, I preheat the oven to 425 then when I put the bread in, I lower the temp to 375 and add 6-7 ice cubes. The crust is as thin and soft as store bought bread. This bread has a lot more water than my regular recipe so I’m not sure if my tip will work.
