Hi Sandra! I would probably just use 1 8 inch pan. Be sure not to overfill it and I would just discard any excess batter. If you try to stretch it to 2 pans the loaves are going to be really thin.

I’ve made this recipe several times and this makes the best banana bread I’ve ever made. It has a beautiful rise and is very moist. I’ve made banana breads with sour cream and Greek yogurt but I believe the buttermilk in this recipe really makes a difference and helps create a moist, light and flavorful banana bread. I’ve thrown out all my other banana bread recipes and only make this one.

Truly the very best banana bread ever!! I did not have buttermilk, so I used a bit of sour cream and thinned with a bit of milk. Other than that, used your recommended ingredients and instructions. Definitely keeping this one!

Hi Coco! It’s fine to remove from the pan once it has cooled. Did you get your toothpick down as far as you could? Did you go straight down and straight back up? Did you loosen the banana bread from the sides of a pan with a knife before attempting to invert it? It sounds like it may have just needed another minute or two in the oven. 🙁

I tried to invert mine and it didn’t come out well it was almost like the inside wasn’t done cooking. I cooked it for 60 minutes per recipe instructions. When I took it out of the oven, it looked perfect, and the toothpick test didn’t come back with any crumbs.

Hi Ally! I haven’t experimented with adding strawberries so I can’t say for sure how it would go. My concern would be that the strawberries would add too much extra moisture into the bread.

I made this banana bread for the second time yesterday. This time, I added milk chocolate chunks, peanut butter chips and a mix of chopped walnuts and pecans to the batter. Before popping it into the oven I sprinkled more milk chocolate chunks and peanut butter chips over the top, then baked it for 65 minutes which reached an internal temperature of 195 degrees. The bread rose beautifully and was absolutely delicious as it was the first time I made it. Very moist and even better the day after it is baked. I really love all of Sam’s recipes. I’ve had so much success with all that I’ve tried and received so many compliments.

Delicious and a comforting homestyle recipe! Not too sweet and the top gets crunchy which gives it the best texture. I used gluten free flour and it worked perfectly. I also needed to bake an extra 10 minutes and tent with foil towards the end to prevent over browning. Flaky salt and butter, Nutella, or peanut butter are a must!
