I made this tonight. I think I could have eaten the entire pot. This soup is incredible and just what I needed in my life. I did make a tiny alteration, I drizzled maple syrup on top with 1 piece of crumbled bacon.

In reply to Wendy. Why did you start with Thai coconut milk on the counter and then end up using a different brand when you made it. I'm assuming that had to do with filming and supply of different brands of coconut milk.

Wow. I am an engineer and find your practice of adding ingredients (with measure) directly under the instruction steps very clever and helpful. I have never seen this before and it’s just too innovative. Kuddos to you!
