I made this icebox cake for my family and everyone loved it! I bought chocolate graham crackers at Winco and they worked great. Will be making it for a birthday cake this weekend. Thank you!

So I made this yesterday and today it was a hit at the church potluck. It wasn’t exactly picture pretty, but it was delicious. I will make it again, trying to distribute the chocolate ganache more evenly between layers. I actually had so much left on the top layer that I ended up throwing some away. I know. It broke my heart. Anyway, it was very well received. Thank you Sam for making me look like a good baker. Again.

In reply to Mary. Our local Walmart is selling chocolate graham wafers this month, July 2025. The box is a bit smaller so I bought 2. Actually I bought 5 boxes because if it turns out, and of course it will, I may want to make it a second or third time.

I tried this with the Goya Chocolate Wafer cookies. (Cheapest on Amazon) However, the wafers moved around too much. I ended up mixing everything all together and it was still delicious! Next time I may try spreading each cookie individually before placing in the pan. Good luck with yours!

5 stars even though I haven’t made this yet because your recipes are always great. The reason I haven’t made this yet is because it appears chocolate graham crackers have ceased to exist! Granted, Amazon offers some for around $30 but no thanks.
Do you think chocolate wafer cookies would work or what do you suggest? Thanks!

In reply to Autumn. Hi Autumn! The graham crackers don't become soggy, they become more cake like, but not soggy. I think it would be ok to make about 24 hours in advance I would think. :)

This is the first and only time I’ve ever commented on a recipe online before because this is MY FAVORITE dessert OF ALL TIME! The cream cheese factor really makes this icebox cake stand above the rest. I dream of this cake. If on my deathbed I get the option to choose a last meal, this icebox cake would be it. If you like a good chocolate/cream cheese combo and are into food textures, this is for you. It’s sweet but not too sweet. It’s soft but the chocolate ganache and chips give it bite. It’s a perfectly balanced, incredibly delicious, craveable pan of heaven. THANK YOU SO MUCH!
