I feel like I’m marathon baking Sugar Spun Run the last 2yrs, haha And no recipe has let me down. This recipe is just awesome! Even with me baking it in an 8X8 pan instead of my glass bread pan (I worried it would take so long in my glass pan that the sides might get too done, so I used my 8X8 metal pan.) Turned out just awesome!!

This is the easiest and best recipe. I lower the amount of sugar and it still comes out amazing! It’s a constant in our rotation.

I had zucchini to use up and made this yesterday for my chocoholic hubby. I followed recipe as written baked for 80 minutes and it turned out perfect!! Like another reviewer I’m not a huge chocolate fan either but OMG this was totally amazing. It was perfectly fudgy and totally decadent without being overwhelming. I was pleasantly surprised. I think blooming the Dutch cocoa powder and instant coffee with the hot water is the key, don’t skip this step. Will definitely make again.

In reply to Maridele Neikirk. I'm glad you ultimately enjoyed it! The coffee is supposed to enhance the chocolate flavor, not add a coffee flavor to it. If the bread was crumbly it was likely because you lost some moisture by not having all of the zucchini. :(

First let me say I’m not a huge chocolate fan and I do not drink coffee. But I had some zucchini to use and this recipe looked good. I brewed a small pot of strong coffee just to use for this. I did not have enough grated zucchini that the recipe called for but I forged ahead. My loaf did not come out of the pan and it seemed crumbly. But the taste was delicious and I could not detect the coffee. I will make this again but maybe try muffins tins instead.

Fudge, moist and delicious. Even if you completely forget to add the chocolate chips.
