Hi Sam. I’ve made them at least 3 other times, with no problem. I am using the same oven. The oven is not that old, but I’ve already been watching it and installed 2 oven thermometers. Could it possibly be the brand of unsweetened coconut flakes? It was organic. It’s the only ingredient that may be different than before.
I think I will try another time and watch at the 5 minute mark and go from there.

Hi Mary! Letting the dough rest shouldn’t cause quick browning. Is it possible your oven was running hot? Or maybe the cookies were made slightly smaller?

But this time they browned too much/ too fast. Good thing I was baking 6 at a time. I ended up reducing the oven temp each time. Could it be that this time I let the dough sit in fridge over night?

Hi Sam, I just made this recipe again, but this time with Bob’s Red Mill 1:1 Gluten Free Flour Blend. They were just as good as with regular flour! A gluten-free expert that I read says to reduce the butter by 2 1/2 T of each stick of butter, for this type of cookie. But to be aware that not all GF flour blends are the same, since some flours absorb liquid more than others. And the humidity of my kitchen always affects the flour too, living in South Texas. But I think this recipe is worth trying, gluten-free or not!

I must agree that these cookies are the absolute best! I’ve made them twice already. I I tried subbing the caramel with chopped pecans because Coconut Pecan Cookies are also a favorite and they were great.

OMG!!! I love these cookies. I’ve been trying to find a coconut cookie from when I was a kid. I’ve tried every coconut cookie i could find they have all hit the trash can. Not these! I ate almost a dozen of them! Trust me I’m absolutely head over heals crazy for these. thank you for sharing.

These are very good. Few changes. I baked at 350F for about 10 mins. I used sweetened coconut. I rolled them first then refrigerated for 2-3 hrs before baking.

Awesome cookie. I put them in the fridge for about an hr, then cooked at 350F for 12-15 mins ( light golden brown near edges). Cookies were soft/perfect. I used walnuts in some and cashews in others. Did not use caramel chips. I did use sweetened coconut. Not overly sweet, they are just right. Did not dip in chocolate. Next time I will try unsweetened coconut. These were loved by 7 different people and me. So it must be a winner. I really appreciate all your videos as they are quick shorts, to the point and very helpful.
