However, this one will not make it to my recipe file. I made it twice. Both times I found the cookie base to be a little dry. The icing was OK but nothing special. I even tried using a maraschino cherry half on the second batch to liven it up a bit. People said the bar was “OK” but i had leftovers. One recipe that I wasn’t wild about! Keep up the good work, though, “cause this was the only one I haven’t been pleased with.

I found the cookie part was a little too thick, didn’t cook fully in the center and it was a LOT of cookie, I will use a 15″ x 10″ pan next time. I also lightened the cream filling with about of cup of stabilized whipped cream – it was heavenly.
I highly recommend all of Sam’s recipes

Made a small batch of these in an 8×8 pan, I halved the recipe and baked for ~22 mins. Very coconuty and pretty sweet, but so so satisfying! Thanks for the recipe

I made these today and they’re delicious. The cookie is soft but not crumbly so it holds together nicely. I used the two cups of powdered sugar for the icing and that was perfect.
