Absolutely delicious! The tanginess of the cranberries matches perfectly with the sweet and amazingly fluffy cake.

Made this cake for Christmas this week and it’s now my FAVOURITE dessert. Quite easy to make and absolutely beautiful texture and taste.

Am going to make multiples next year to take to pot luck lunches and when visiting friends and relatives over Christmas.

Thank you so much!

Very, very delicious!! I used only 275 grams sugar and sprinkled almost 2 tbsp on top. Baked beautifully! Thank you so much💕

Another great taste recipe. A helpful tip for those of us at high altitude would be to know at what altitude any specific recipe was baked. Altitude affects the end product since temperatures are different;
eg.:
3,000 ft: ~206–207°F
5,000 ft (e.g., Denver): ~202–203°F
7,000 ft: ~198–199°F
10,000 ft: ~194°F
It also allows the home baker to adjust- extra liquid, less leavening/sugar, more flour, based on elevation. Having said that, I always appreciate the teaching you do with every recipe.

In reply to Sam Merritt.

Wanted to let everyone know I did make this again because it was so good I did two cups of strawberries and a cup of pineapple tidbits. Literally so good I will be putting every kind of fruit I can think of in this cake. The cake itself is so good!

This is not the type of cake recipe I would typically choose, but I wanted to make recipes using fresh cranberries. I sent it ahead to a Thanksgiving gathering where guests were randomly arriving and eating whatever was there. When I arrived, no one had really eaten much so I sent a row home with one little girl that had tried and loved it. I left the dish there and got a text the next day from someone in the household saying they ate it all and it was so good! The day after that I got another text from their housemate asking if I would make another because someone ate it all and they only got one piece! This one doesn’t sound or look exciting but they will be scrapping over it to the last piece. I had seen another review where someone had to turn their car around and come back for more. I get it now; definitely a hidden gem.

In reply to Linda.

I’ve made this cake many times. I do use a light sprinkling of turbinado sugar on top. It gives a very pretty sparkle and a light crunch to the crust.

This was one of my favorite desserts! I made 4 different desserts this is the only one I do not have any leftovers. The only thing I added was I did a sprinkle of powdered sugar lightly on top after baking and cooling. Adding this one to my regular dishes will try with other fruits!!!!!!!!!!!!!!!

Hi Sandra! I wouldn’t recommend cream cheese as a substitute for sour cream. Greek yogurt will work though. 🙂

Hi Nekes! This is disappointing to hear, the cake certainly shouldn’t be this wet nor should it take that much longer to bake. I am wondering if perhaps something else was mismeasured that made the batter too wet. Did you compare your batter to the photos/video in texture?

It was too wet to serve. I suspect that I added to many cranberries and should have reduced the qty to 2 cups.

I live in Calgary AB, and my oven requires me to increase the temp by 10°c, and time by 5 minutes. But today it took an extra 45 minutes to bake, which was time I didn’t have. 🙁

I would do this again with less cranberries and on a free afternoon. The 2 pieces that were edible were Devine.
