Ive actually had this happen (not with this recipe) and the answer is in the crumb distribution. Cant remember where I stumbled upon it, but it was an east coast crumbcake bakery that explained. When applying the crumbs, always apply to the whole perimeter generously before moving to the middle. It provides surface tension and keeps the cake batter from lifting and covering the crumbs along the edges where the cake bakes and sets first.

Hi Susan! So I expect the crumb topping to be a bit crisp, especially on top, but you can absolutely tent it with foil and that will help. I would probably do it after about 30 minutes or so and I would probably just loosely tent it and then keep it tented as it cools. 🙂

Hi Sam I commented under another recipe I think so I am trying again. This crumb cake is the best I’ve ever made and the best tasting. I would have given a 10 if I could! my only problem is my crumb topping was crunchy instead of soft but the cake was super moist. I read that people tented it so I wanted to see if that would keep the crumb topping moist and when should I tent it. thank you.

This cake is so good I just leave the fork in the pan and they stay together till the cake is gone. Not every cake demands this kind of treatment but this one does.

Crumb topping is nice and thick (as it should be) and underneath is the most delicious, light, and moist cake. I love a good crumb cake (I feel they are underrated) and I’ve made many and oftentimes the cake is much too dry. Not this one. This one is my ride or die recipe. It’s pretty perfect.

I have an idea, if you want to go to this much trouble.
Make 1/2 batch of Sam’s pastry cream recipe, and have it well chilled.
When making the cake, first line the pan with foil or parchment, allowing some to hang over the sides. After the cake is completely cooled, carefully lift it out of the pan. With a long-bladed bread knife, carefully cut the cake in half horizontally, and carefully lift off the top half. (You’ll definitely lose some crumbs, but there are plenty). Spread the pastry cream over the bottom half, not quite to the edge. Return the top half and refrigerate the cake. You now have a cream filled crumb cake, and you get to eat the crumbs that fell off.

Excellent! Moist crumb.. not too dense… not too soft. Buttery crumb topping. I foil tented at the 35 minute mark. My 9×9 pan was fully baked at 42 minutes. Will make again!

I made this beautiful cake for the first time this morning! Then, so sadly, it slid off the rack of my countertop oven and landed upside down on my kitchen floor. A true tragedy because the bits that I ate were just so delicious. I’ll try again soon, but no cake for the company that’s coming. They won’t know what they’re missing.
