In reply to Catherine. Hi Catherine! It's really just a technique. You will have to experiment with it. When piping you will want to move the bag around quickly. Unfortunately I don't have a video here, but you can see me pipe my regular meringues if that helps. :)

In reply to Catherine. Hi Catherine! We like to place the piping bag (fitted with the tip) in a large cup. Fold the top edges of the bag over the rim of the cup, and then you should be able to spoon the batter into the bag. Hope that helps!

It’s very important to follow the instructions on beating the egg whites & adding the sugar slowly. Also, pipe the cookies FAST or they will collapse in the oven. I did 2 batches. The first entirely collapsed, as the whites weren’t beaten enough. The second batch was better, but the last few cookies kind of morphed into circles, not the pretty swirls.

These meringues are so good! I love making them and having fun experimenting with new flavors besides just vanilla! This recipe is amazing and now it is very often used in my kitchen.

In reply to Edith. This recipe appeared in Bon Appetit several years ago. I would LOVE to find that issue again. It had several winners in it, including this one. Delicious deep chocolate flavor, yet light. Very pretty. I've thought of doing them up like Macaroni and filling with ganache.

Hello, SSR ladies! Would you please tell me how BIG to pipe the meringues, in order to achieve the quantity you listed (30) for this recipe?
Unusually, for you, it wasn’t specified this time! I’m sure adding the info would be of benefit to others as well, especially if one needs a specific quantity.

My 12 year old son and I made these (and your original meringue cookie recipe) and both were superb! We might try almond extract with cocoa next time, to see how we like that addition. We didn’t even dip them in melted chocoloate – just light crispy cocoa meringues. My son really impressed his grandma.
