I sautéed onions and used 2 10-oz cans of canned chicken. I drained the chicken, mixed in some cream cheese and a tiny can of green chilis, and, of course, added 1 and a half cups of cheese to the stuffing mixture. I used flour tortillas, and it was so super good. Now, if I can get my 6-year-old to eat them and love them as much as my husband and I do. Thank you for sharing!

Excellent recipe. This popped up on you tube when searching. Didn’t change a thing..even used the sauce recipe. I took the option to fry the onions prior to mixing and the family loved it.
Made this twice so far, turned out perfectly both times.

I made this for my family tonight. We really liked it. I think my personal preference would be just a bit less onion or to sauté them before adding. My husband insisted on adding extra cheese. I’m looking forward to making my own sauce for next time. Thanks for the yummy and easy recipe.

I love how this recipe looks very easy but I have not made it yet. Question, are the onions that are added to the chicken mixture, which you mentioned not to cook, crunchy after the casserole is heated up? Also, where is the enchilada sauce recipe? I would love to make that too. Thank you.

I have rarely eaten enchiladas, just never a favorite. And I never considered making them until I saw this recipe. Seemed like a good weekend meal and I had all the ingredients so I gave it a try. This recipe just changed all that, and it’s now a favorite! And the enchilada sauce recipe made it perfect. My husband is a big fan too! Thank you!!
