They were very nice though I did substitute the lemon curd with a butter cream. Everyone loved them and they looked great!

Made these today for my Grandchildren. They loved them, and so did the adults. Delicious and fun. I didn’t have an egg shaped cutter so I did used a round cutter. They look awesome, just like an egg you would fry sunny side up.

These cookies were amazing and the. Used was the best I’ve ever made. I did not sprinkle powdered sugar in the top of the cookies (they are plenty sweet!) and they were still excellent. Taste like little lemon pies and are so cute. My friends love them!A new family favorite. Have made them 3 times already.

In reply to Sam. Sam, I am looking at this recipe again (still have not made them, sorry), and you say to dollop a teaspoon of the curd onto the bottom of the cookie. The photos, though, seem to show more than a teaspoon (I'm thinking measuring teaspoon). Can you tell me more realistically, how much curd do you put on the bottom cookie? Is the curd to cover the bottom cookie once the top one is placed? Thanks!
