Hey Nicole, don’t be scared to bake. I don’t have a pastry cutter either. I slice the butter and freeze it then use a metal fork and knife to smash it into the flour. Works just as well lol. Hope this helps, happy baking!!

these are WAY too easy make for how good they are. if you don’t pay close attention, you will eat half the tray. i’ve avoided biscuit recipes for a while because i don’t have a pastry cutter and they scare me! but melted butter is a great trick 🙂

That was the best biscuit I’ve had IN MY LIFE. Wow. Paired them with her potato soup recipe. Mind blown! And cooking them at the same time was so easy and seamless. My husband ate 5. I have to hold him back from the rest! Well done.

I don’t think so. But, if I had baked them any more, they would have been burned. I was thinking that I should have flattened them a bit, before I put them in the oven. They were very round balls.

They were delicious, though. And, no one was bothered by the fact that they weren’t flaky (except me).

I’m confused. I doubled the recipe, and the recipe said to use 1/2 to 1 cup of cheese. So, I used 2 cups of cheese, which is the correct amount for double the recipe. Why would this cause the biscuits not to be flaky, if I followed the recipe?

Oh, my word, so good! My brother said they were the best he’s ever had. Buttermilk can be harder to come by in the UK, so I used a lemon juice/milk (1/2 tbsp lemon juice and whole milk to make up the 1/2 cup) swap and they worked great! Thanks so much for the recipe!

Delicious! I had no buttermilk, so I quickly made some with 1/2 cup whole milk and squeezed the juice of 1/4 of a lemon into it, let it sit for a few minutes and it worked really well. The biscuits had a nice tangy flavor.

Sam, we have enjoyed these biscuits many times in recent years, both for the two of us, and when kids and grandkids visit. We agree – a cup of cheese is perfect! I love these for at least two reasons: easiest biscuit recipe ever, AND most delicious. The only time we don’t use this recipe is when we want a biscuit with jam or honey, and that’s not very often. Thank you for sharing this!
