Thanks for the info. I guess I wasn’t taking into consideration that it’s just the sugars at the high temp & the added fats cool it down? I made it today & it is delicious! I sampled so much i may have to make more so I have enough for your caramel cheesecake. 🙂

Your toffee recipe is 305°(hard crack) and your caramel candy squares are 240°(soft ball), so it’s hard to imagine a liquid being a higher temp than a solid.

the taste was good and I followed this recipe to a T but for some reason it came out very thin to the point it ran right off my cheese cat even in the fridge 😭 will try to make one more time and cook longer maybe?? but it was at perfect color. if it does come out thin again I won’t top until actually serving the slices of cheesecake

Thank you! I did end up using this to top cream puffs and it was amazing! I made it on the thicker side and used just a touch more salt and it was spot-on. Like you said, it did not firm up like some glazes might, but it worked perfectly for this purpose! Will definitely use again!

Same thing happened to me. If I let it go to the degrees you have in the recipe it burns. Can I just go by color and not worry about hitting the degrees you suggest?

Absolutely delicious, creamy, and smooth. I cooked to 345°, used 1/3 cup of heavy cream and added a handful of toasted pecans. I used this as a topping for Sam’s Best Banana Bread (omitting the granulated sugar topping in the recipe) and it was amazing!
