I made this yesterday and for the first time in my pastry making life my husband loved it sosoooo much that he had not one large slice but two! And after he finished he hugged me and said thank you honey, that was really great cake. Better than _____’s ! So I highly recommend this lovely cake. It takes a bit because of the method, but the taste is worth the effort. I topped mine with a lemon cream cheese frosting.

Hi Emma! I’m not sure what could have gone wrong to make it that firm? Was it over-baked? Was there too much flour added? Did you make any alterations?

Awesome cake recipe. I changed buttermilk to the 3/4 cup to 4 tablespoons of yogurt and milk. I just used basic whipped icing with lemon juice flavour.
The cake was light and airy.

The temperature will remain the same. I’m not sure if all of the batter will fit into the 2 pans so just make sure to not overfill the pans. I’m not sure on the bake time. I hope you love the cake! 🙂

Will that work? I am thinking of halving the recipe since it is just my husband and I, and we are trying to watch the amount of sweets we eat.

Thank you!

Deb

Hi Cynthia! I think you could bake it in a 13 x 9, but just know that all of the blueberries will likely sink.

I baked the lemon blueberry cake yesterday and OMG I can’t say enough about how moist and flavorful it was. I am not a big baker but I can’t wait to try more of your recipes.

Hi Vicky! The temperature would remain the same, but the bake time would likely be shorter. I’m not sure how long they would need to bake so just be sure to keep an eye on them. This will probably make enough for 3 6 inch cake pans.

Hi Kathy! If this is baked in a large pan like that the blueberries will all sink to the bottom completely. It can be done, just know that all of the blueberries will sink. 🙂

Hi Kathy! You can freeze the cake layers if need be. 🙂

Hi Cindy! It may make a little too much batter for for just 2 pans. Make sure you don’t overfill the pans.

And if it is frosted ahead of time, how do you store it?
