Hi Lisa! I’m so glad you’ve enjoyed the pie! I wish I had a lemon tree! My husband tried to grow one inside one time but he killed it pretty quickly. 🙁 I haven’t personally tried increasing the sugar but I think it would probably be ok to increase it slightly. 🙂

i only needed the lemon curd portion of this recipe and it did not disappoint, i added 1.5tsp of lemon emulsion in addition to the lemon juice and a overly generous tbsp of zest and the flavour was absolutely perfect!! thanks for the recipe it’s the newest addition to my personal recipe notebook. 🩷

This pie was AMAZINGLY delicious. I made it this week. Yes, it is a process but oh so worth it. It was fun to follow your video as I made the pie. I actually watched the video first, purchased and prepped all the ingredients and was ready to go. I made the crust the night before and started the actual pie the next day. It was fun to make this with you. I have a very old electric stove (VERY OLD) so the filling and the meringue took some time to cook on the stove, again worth it!! I did leave it in the oven a bit too long (that was all me- not the recipe, you even warned to watch it. It browned more than I would have liked, but it didn’t really matter as far as taste, just the look. Again, my stove and my problem, not the recipe.
I never made a crust in the food processor or with sour cream. There were a lot of firsts for me. All great ideas. Thanks for doing the research and experimentation.
Anxious to try some of your other recipes. I am so happy I found your website. Thank you!!!

Wanted to clarify it wasn’t meringue that weeped. That was perfect. It was lemon colored water in bottom of pie, enough to pour out. Any ideas why? Filling was perfectly set. Pie is still delicious but would like to solve this for the future.

There are so many causes for weeping with this pie: humidity, under or overcooking the meringue, using old eggs, and refrigeration (a necessary evil) just to name a few. Luckily, cooking the meringue first before adding it to the pie does wonders for preventing weeping, which is why I prepare my pie this way. It’s not 100% foolproof, but so long as you follow the steps (watch the video if you are a beginner) I’m confident you will have success, and no weeping!

Followed recipe exactly. Tastes delicious but pie weeps. Also next time I might cut back the water in filling and increase lemon juice just to have it a bit more tart.

I think both of these things could have caused issues. 🙁 The egg yolk can prevent the meringue from whipping properly, as can the humidity. 🙁 I’m glad you were still able to enjoy it. 🙂

Hi, Sam. I tried your lemon meringue pie and it was whimsical. Everything turned out well—except for the meringue. It didn’t come out as fluffy and as stiff as yours. I do have to admit that some yolk did spill into the egg white when I attempted to separate them. I’m from Malaysia where it is rather hot. Do you think any of these factors may have affected the formation of my meringue?
