At first I thought these cookies were not very flavorful, but the day after I made them, they somehow got more flavorful! They are so so good!

You can never miss with a sugar spun run recipe! These cookies are soft, yummy, and not too pumpkiny. The cream cheese frosting is phenomenal love the addition of the brown sugar. I’m a little competitive so I brought this cookie as a donation for our local Christmas cookie walk.

You could certainly switch up the topping, or you could try one of our other frosting-less pumpkin cookie recipes, like our classic pumpkin cookies, pumpkin snickerdoodles, or pumpkin oatmeal cookies. We flatten the cookies after baking to give them a more tender texture and create a flat surface for frosting.

Anything ideas other than making a frosting? Sprinkle with cinnamon sugar mixture?
Also why use a glass to flatten the cookie after baking?

Enjoyed making this Lofthouse type cookie. My dough turned out sticky and I’m wondering if I should have added more flour. I placed a small square of waxed paper under the glass as I flattened them, and that worked well. Icing was divine! Fun to have a decorated cookie for Thanksgiving.
