This was such a great recipe! My child has horrible food allergies so I’ve had to start making foods that they’ve loved but now can’t have. We had to adjust a few things but this recipe made it so easy to adjust as needed. I used mayo and sour cream that are plant-based. They also can’t eat bell peppers or eggs, so we just omitted them and added some cucumber instead. The dressing was so yummy!! My child said it was the best macaroni salad they’ve ever had. That says a lot; they LOVE macaroni salad!!

This is absolutely the best pasta salad recipe I’ve ever used. I actually most of the time just use the dressing part of it and change it up. I use 8 oz rigatoni pasta, diced cucumber and black olives. I then also will throw in some bacon. Sometimes I cut back on the red wine vinegar and sweet pickle juice. In the past, I’ve put in a little ranch dressing as well. I have tried it the original way, but regardless, the basic dressing is the best I’ve ever used. I don’t think it can get any better.

Enjoyed this recipe very much. I took it to a potluck, and several asked me for the recipe. I gave them your blog/site. I was a little skeptical of the eggs, but it did add that little something to it.

In reply to Liisa. 16oz of pasta makes a LOT of macaroni salad. If you wanted to make a whole 16oz box you would just need to double all of the ingredients. :)

Why would you use a recipe with 8oz when the standard 16oz? I just doubled the ingredients thinking I made double only to realize this is for a 1/2box? So now I have to make more to =32oz…. Never seen this

My husband requested macaroni salad, as a side with my smoked 3-2-1 ribs, for our 4th of July celebration. “Happy Birthday America!” I added both dill and sweet pickles, sweet peas, bacon bits and cubed medium cheddar cheese. This is DEFINITELY my go to recipe. Wonderful indeed! Thank you for sharing your recipe!
