Hi Jean! I haven’t tried it so I can’t say for sure. This is going to be a tricky one. The caramel is going to melt and will pretty much be unidentifiable. You could potentially stir some caramel bits in with the marshmallows or right after. If you do try it I would love to know how it goes. ๐Ÿ™‚

I’m so sorry to hear this happened, Jessica! That’s quite odd. The only thing that would cause the chocolate to seize would be that the marshmallows were wet or cold? Is it possible any moisture got in with them?

Ok…so I’m on a roll with various recipes on this site, and this recipe was no exception. First, it’s SUPER easy, and practically foolproof. I follow all of Sam’s recipes to the letter, but I admit that I substituted lightly salted almonds for the peanuts (I like peanuts as much as Sam likes raisins!). They turned out phenomenal!
For those that experienced melted marshmallows, I avoided this by 1) taking the crockpot insert out of the crockpot after an hour and 5 minutes (that’s how long it took for everything to melt for me), and 2) I continually, yet gently, stirred everything (sans the marshmallows) for about 8 minutes to help the mixture cool appropriately. THEN I folded in all the marshmallows and none melted. Yay!
If you use the size scoop that Sam mentions, you’ll yield approx. 70 clusters!
I hope my coworkers haven’t made any dietary resolutions yet, because I’m taking these tasty beauties to the office tomorrow (or I’d polish them off in a week!)

Did exactly as stated, however, I waited 7 minutes before adding the marshmallows (it said to wait 5 minutes). Marshmallows did melt. If I try again, I will add a few and maybe wait 10 minutes before I add them. So sad, I was hoping to surprise my husband since he loves rocky road!
