I cooked the raspberries down enough but I also found not enough raspberry flavor and very sweet/ butter flavor. Next time I will double the raspberries, and maybe a bit less sugar.

This frosting is so delicious!!! I made a double batch and covered a triple layer dark chocolate & chocolate mousse cake for my daughter’s bday. The leftover raspberry frosting I froze, and later used it to cover greek yogurt sugar cookies. Both desserts were some of the best I’ve ever made or tasted!! The raspberry frosting is soft at room temp and the taste is excellent. πŸ‘Œ

I don’t have an exact volume measurement, but this recipe makes enough raspberry frosting to cover a 9Γ—13 cake or a 2 layer 8 or 9” cake, but it won’t be super thick and you won’t have enough to pipe pretty swirls on top. You can also use this raspberry frosting to generously frost 12 cupcakes, or more modestly (think rosette decoration) swirl 18. If you like less frosting, you will be able to do 24, but it will be sparse.

I found sticking to the recipe made the frosting very sweet with only a touch of raspberry so I doubled (possibly a tad more too) the amount of raspberries and found the flavour came through much better!

Personally I would be comfortable doing so as long as it’s not too warm, however, I’m not sure what the official safety recommendation would be. It would likely be to refrigerate after a day.
