In reply to Karen McLaughlin. Hi Karen! Unfortunately I do not have experience with gluten free baking, but I think a 1:1 gluten free flour could work. I'm not sure almond flour would work quite the same.

I am baking for my granddaughter’s wedding. I am about 3 weeks out. I will be making your carrot muffins–shortbread cookies–lemon meltaways & sand dollar cookies. Can I freeze these ?
or what would you recommend for a time line?

Made for my great niece’s mermaid/pirate theme party and they were perfectly delightful. So many compliments and one guest said we could sell them they were so good. Was a bit of effort and dough was a bit dry to work with but I left out a bit longer from fridge to make easier to roll. Reminded me of biscochitos that come from New Mexico. Many thx for sharing recipe!

Made these for a friend’s beach themed party. They turned out great. Super cute and tasty.
I used every last crumb of dough and made 45 cookies.
Time consuming but worth it.
