These turned out great. I did not know that the muffin rises more when the dough is left to rest for 30 minutes. Thank you for sharing 🙂

These are THE.BEST. muffins maybe in the world (at least in mine). Here are some specifics:

1) the recipe is concise, makes 12-delicious muffins, no waste, not sort on anything,
2) love that there’s a metric weight conversion for the fussy folks like me,
3) these are not suuuuper sugary, the bananas and sourdough work very well together to create a moist muffin.

My personal flare is that I add some walnut pieces and sprinkle of sea salt to the muffin tops. SO good!

Great recipe! Almost identical to my usual banana muffin recipe which uses sour cream in place of the sourdough starter. I’m relatively new to sourdough baking and this was my first attempt to use the discard. Only addition I made was to add a half cup of chopped walnuts. Muffins were moist and flavorful. Thanks.

Could I combine your sourdough blueberry muffin recipe with this one and add the blueberries to the recipe and follow baking instructions for the sourdough banana muffins? Do you think that would turn out or have too much moisture?

These are great. I am always looking for discard recipes. I added a bit of nutmeg and cinnamon and made a caramel icing–they were spectacular! Also your baking technique results in perfectly formed muffins thanks so much

These are absolutely delicious! I go through many banana muffin recipes however some recipes will call for only 1 banana I love how this recipe is full of banana. I always add chocolate chips and walnuts for extra texture and taste

The best sourdough banana muffin. I used 20g less sugar to adjust to family needs. Overall, it’s perfectly moist, and uses a lot of discards!
